The Restaurant is run by a family that combines Sabina's typical traditional dishes with new creative gastronomic proposals, within a relaxing atmosphere. Each course is accompanied by soft wood oven-baked bread.

"Il Gelso Nero" is surrounded by Sabina's Nature out in the country near Castelnuovo di Farfa; it is framed by an amazing landscape with lots of history and nature sites. Guests at "Il Gelso Nero" are offered a wide variety of genuine tastes of their own food combining Sabina's tradition. The family prepares every single dish with passion and care of local products. Among their popular dishes: Tagliolini pasta with marjoram-flavoured oil and Roman pecorino cheese; gricia-seasoned Stringozzi pasta - made only with flour and water - with Amatrice cheek lard and very mature local pecorino cheese.

Paola and Francesca Pinci have conceived this gastronomic project together, creating a restaurant where Francesca - the chef - makes dishes which combine tradition and genuineness, and Paola - the room director - welcomes all customers with a refined and domestic hospitality. The two "comari" serve dishes inspired by Sabina's cuisine, appraising all ingredients from La Mola - olive oil, patés, jam, vegetables and herbs - and recovering old local recipes which are only apparently forgotten.
