The purpose of the Umami OliveoilCamp is to introduce participants to the world of olive oil from harvesting to bottling. Umami Oliveoil Camp is sponsored by SabinaOn, UmamiArea, Slow Food Sabina, in partnership with Sabina DOP Oil Consortium, Starkmacher and Olio Costa.

This professional Camp operates in a friendly informal environment offering full immersion into Italian culture in close contact with the area and the local people. Our instructors will lead you on a stimulating journey through the history and mysteries of one of the top olive oils in the world. This 4-day Camp will be held in the Sabine territory, just a stone’s throw away from Rome, in two different week end of training.

General Programme

Day 1

Arrival in Sabina and Night visit to the Imperial Farfa Abbey

Day 2

Olive harvesting, manufacture of olive oil in the mill, fresh organic olive oil tasting with introduction of sensory evaluation, sensory analysis of the wine.

Day 3

Visit to Olive Oil Museum and visit to a Sabina DOP Consortium company, DOP olive oil sensory analysis and cooking lessons: the correct olive oil for each dish

Different activities relating to olive oil. Departures

Training: the plant, the different varieties, the cultivation techniques and  harvesting, traditional and modern production systems and fresh olive oil tasting. Introduction of sensory evaluation, specific vocabulary, AISO evaluation form, tasting of different olive oils

Day 3

Training: the main flaws of olive oil, manufacturing, processing and storage, Tasting of Sabina Dop Consortium olive oil. olive oil in the kitchen, cooking techniques, the correct olive oil for each dish.
