Among their popular dishes: Tagliolini pasta with marjoram-flavoured oil and Roman pecorino cheese; gricia-seasoned Stringozzi pasta - made only with flour and water - with Amatrice cheek lard and very mature local pecorino cheese.

Paola and Francesca Pinci have conceived this gastronomic project together, creating a restaurant where Francesca - the chef - makes dishes which combine tradition and genuineness, and Paola - the room director - welcomes all customers with a refined and domestic hospitality. The two "comari" serve dishes inspired by Sabina's cuisine, appraising all ingredients from La Mola - olive oil, patés, jam, vegetables and herbs - and recovering old local recipes which are only apparently forgotten.

Thanks to the presence of a wide apartment block, the agritourism offers restaurant service and a large accommodation capacity. Inside the restaurant simple and traditional dishes are prepared, which are typical of Lazio and Umbria's cuisine; they are all based on meat - grilled or oven baked - cheese, cold cuts, vegetables, pulses, and so on; they all are self produced and often accompanied with authentic truffle sauce.

From the land to your table. All food produced by the family farm is cooked for creating genuine dishes which are typical of Sabina's cuisine. We grow our vegetables with love, without chemicals and pesticides; we use nettle macerating, equisetums and similar formulations, trying to respect the natural balance of the land. We breed our animals with organic feed and leftovers from the garden. We put the same love and passion in cooking our products for serving!

We are lucky to live in Sabina, a land that since ancient times has been meant for ever-green olive trees. Moreover, being at the centre of a farm allows our guests to have wide spaces for walking, resting in the shade and spending a day in harmony with nature. The RESTAURANT only uses the farm products with respect to the ancient tastes of the farming culture. Fettucine, stingozzi pasta with olives, spelt with truffle, wood oven baked meat, roasted piglet, and so on, the whole seasoned with Sabina extra virgin olive oil.
